MELBA CHEESECAKE PIE 
1/4 c. butter
1 1/4 c. graham cracker crumbs
2 tbsp. sugar
1 (16 oz.) can sliced peaches, drained
1 (8 oz.) pkg. cream cheese
1/3 c. sugar
1/2 c. sour cream
1 egg
1 tsp. almond flavor
1/2 c. strawberry preserves

Microwave butter in glass pie dish on high power until melted. Add crumbs and 2 tablespoons sugar. Mix well and press onto bottom and sides of pie dish. Microwave on high for 1 1/2 to 2 minutes. Soften cream cheese on medium power. Blend in 1/3 cup sugar, sour cream, egg and almond flavor.

Arrange drained peaches on crust. Pour cream cheese mixture over peaches. Microwave on full power 3 1/2 to 4 1/2 minutes until set, rotating at least once. Cool. Soften preserves on medium power. Spoon onto pie. Keep in refrigerator. 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
