SAUSAGE-CORN MEAL CASSEROLE 
1 lb. sausage meat
1 1/2 c. boiling water
1 1/2 c. yellow corn meal
2 eggs
1 tsp. salt
1 1/2 c. milk (or half each evaporated milk and water)
2 tbsp. sausage fat
3 tsp. baking powder

Cook sausage in skillet, breaking apart with a fork for 8-10 minutes until sausage is cooked and crumbled but not browned. Drain.

Measure corn meal into mixing bowl and pour the boiling water over it stirring well. Stir in sausage. Beat eggs, add milk and salt. Combine with sausage and corn meal mixture. Add sausage fat mixing well - then sprinkle baking powder over all and stir well. Pour batter into a 2 quart casserole. Bake in moderate oven (375 degrees) 40 to 50 minutes until evenly browned. Makes 8 servings.
