HEARTY MINESTRONE | |
2 (16 oz.) can tomatoes 2 c. water 1 can condensed beef broth 1 c. carrot slices 1 (9 oz.) pkg. frozen Italian green beans 1 c. shell macaroni (8 1/2 oz.) 1/2 c. onion slices 2 tbsp. cornstarch 1/8 tsp. garlic powder 1/4 c. grated Parmesan cheese (1 oz.) Combine tomatoes, 1 1/2 cup water and broth. Bring to boil; add carrots. Cover and simmer 10 minutes; add beans, macaroni and onions. Cover; simmer 15 minutes. Combine remaining water, cornstarch and garlic powder. Gradually add cornstarch mixture to hot liquid. Cook stirring constantly, until mixture boils and thickens. Stir in cheese. Makes six 1 1/2 cup servings. |
