SPANISH RICE 
1 1/3 c. uncooked rice
1 1/2 c. water
1 qt. tomatoes
1 can tomato soup
2 tsp. salt
1 c. chopped green pepper
1 c. chopped onion
1 tbsp. oil
1 bay leaf or Italian seasoning

Microwave water and rice 5 minutes on high, then 20 minutes on simmer. Mix other ingredients and bake at 350 degrees until all liquid is absorbed (about 40 to 45 minutes).

Since microwave ovens vary in power, you may need to adjust your cooking time.
