SPANISH RICE AND BEANS | |
2 c. long grain white rice (not instant) 1 can Goya brand pink beans 1 tbsp. Goya brand Sofrito 1 tsp. Goya brand seasoning 1 whole onion 1 sm. piece ham (2 oz.) 4 c. water 1 sm. can tomato paste 1 tbsp. Crisco shortening 1. Put 4 cups water into medium pot along with 2 cups of rice. Bring to a boil and keep it boiling until most of water evaporates. Reduce stove burner to very low flame, add tablespoon Crisco. Cover and let simmer for 20 minutes (turn rice with large spoon every 5 minutes). At approximately 20 minutes rice should be done. 2. Put can of beans into medium pot. Add 5 cups water. Cover and bring to boil. After beans begin to boil, add whole onion, Sofrito, small piece of ham, seasoning salt. Continue at medium flame for approximately 1 hour. Then add tomato paste and continue to boil at low flame for another 20 minutes. After beans are done, serve by first putting rice on plate and then serving the beans on top of rice. NOTE: Since the cooking time for rice is only approximately 1/2 hour and the beans take approximately 1 1/2 hours, one should wait for the beans to have been cooking for 1 hour before starting the rice. Also note that you should check beans during the first hour of boiling and add water if needed. Don't add water during the last 20 minutes. |
