CUBAN BLACK BEANS AND RICE 
1 lb. dry black beans
8 c. water
1 lg. onion, chopped
3 green peppers, chopped
1 clove garlic, chopped
1/2 c. olive oil
1/4 lb. ham bone (optional)
3 bay leaves
1 tbsp. salt
1 oz. white bacon
1/2 c. vinegar
Raw chopped onion

Soak beans in 4 cups of water overnight, after washing them thoroughly. Keep the water for cooking and add 4 more cups of water. Fry slightly the onions, green peppers and garlic in olive oil.

Combine all ingredients except vinegar. Cook on stove with low heat until beans are tender and the liquid has thickened. Takes 3-5 hours. Serve over rice with vinegar and raw chopped onions.

I was raised in Ybor city, Tampa Fl. so I'm familiar with food Cubano. My mother made this frequently. I hate to say this BUT she used smoked sausage instead of ham bone. I think everything else was exactly the same. Can't be beat.
