SPICY SWEET POTATO BALLS 
3 lbs. sweet potatoes, cooked or 2 cans (17 to 18 oz. each) heated and drained
2 tbsp. brown sugar
2 tbsp. butter
1/2 tsp. salt
1/4 tsp. cinnamon
1 egg
24 miniature marshmallows
1/2 c. graham cracker crumbs

Mash hot potatoes, add brown sugar, butter, salt, cinnamon. Mix well. Add egg and continue mashing until well combined. Chill if not firm. Use 1/3 cup to form ball. Placing 3 miniature marshmallows in center of each ball. Lightly roll in graham cracker crumbs. Bake 10 to 15 minutes in 400 degree preheated oven.
