ROSY MINT RELISH 
3 c. finely chopped unpared apples
2 c. finely chopped unpared pears
1 c. finely chopped onion
1 c. finely chopped green pepper
1 c. chopped golden raisins
1 c. chopped fresh mint leaves
1/2 c. finely chopped sweet red pepper
2 1/2 c. sugar
1 1/2 c. white vinegar
1 tbsp. salt

In large kettle, mix all ingredients; heat to boiling, stirring occasionally.
