HASH BROWN CASSEROLE 
1 (2 lb.) pkg. hash brown potatoes
1 stick butter
1 can cream of chicken soup
1 sm. carton sour cream
2 c. grated cheddar cheese
1/2 onion, chopped
Salt & pepper to taste

Slightly defrost potatoes. Melt butter, add remaining ingredients. Put in buttered casserole dish. Sprinkle 1/2 cup cheese on top. Bake at 350 degrees for 30 to 45 minutes.
