HASH BROWN CASSEROLE 
1 lb. frozen hash browns, thawed
1/2 pt. (8 oz.) sour cream
1/4 c. onion, chopped
1 can (10 3/4 oz.) cream of chicken soup
1 c. cheddar cheese, grated
Salt & pepper to taste

Mix all ingredients and spread in casserole dish.

TOPPING: Melt 1 stick butter (1/2 cup). Crush 1 tube Ritz or Townhouse crackers and combine. Spread over potato mixture and bake 1 hour at 350 degrees. May be prepared ahead and frozen for later use.
