RUSSIAN MINT PIES 
1 c. butter
2 c. powdered sugar
4 sq. melted chocolate
4 whole eggs
1 tsp. peppermint extract
2 tsp. vanilla
1 c. crushed vanilla wafers
Whipped cream and maraschino cherries

Cream butter, sugar, and eggs. Beat a long time. Add chocolate. Spoon 1/2 of crushed wafers into cupcake papers. Spoon in chocolate mixture on top of wafers. Sprinkle with more wafers and top with a dab of whipped cream and add cherry. Freeze and serve frozen.
