PUMPKIN, PERSIMMON OR SWEET
POTATO BREAD
 
4 c. persimmon
1 c. oil
4 c. sugar
5 c. flour
3 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 tsp. allspice
1 (8 oz.) pkg. chopped dates
1 c. chopped nuts
1 tsp. vanilla

Mix sugar, cooking oil and pumpkin, persimmon or sweet potato in large bowl. Sift flour, soda, cinnamon, salt and allspice together and add to above mixture. Then add dates, nuts and vanilla. Grease and flour Bundt pan. Bake 1 hour and 45 minutes at 350 degrees until straw comes out clean.
