SWEET POTATO SPOON BREAD 
4 lg. sweet potatoes, boiled and mashed or 2 cans mashed sweet potatoes
(Sugary Sam)
1/3 to 2/3 stick butter, room temperature
1 c. sugar (1/2 white and 1/2 brown)
1/2 tsp. baking powder
1 tsp. cinnamon
Dash of nutmeg
Dash of salt
4 tbsp. flour
2/3 c. milk
2 tsp. vanilla
2 eggs, beaten
1/4 tsp. almond extract

Combine sweet potatoes and butter with eggs. Mix together well. Add milk, vanilla, and almond extract. Mix well. Combine all dry ingredients and add to potato mixture and mix well. Pour into a 9 x 13 inch pan or baking dish. Bake at 350 degrees for 30 minutes. Serves 8 to 10. Delicious with holiday roasts or turkey!
