DATE OATMEAL MUFFINS 
2 c. regular oatmeal
2 c. buttermilk
1 c. packed brown sugar
2 eggs
1 c. Mazola oil
2 c. flour
2 tsp. baking soda
1 tsp. salt
1 tsp. baking powder
1 1/2 c. pitted, chopped dates

Soak oats in buttermilk 1 hour. Beat eggs; add oil, sugar and dates; stir well. Add to oats and buttermilk; mix well. Add sifted dry ingredients and stir just until moistened. Pour into greased tins or muffin liners. Bake at 350 degrees for 20 minutes.

Use purchased chopped dates, takes 1 box.
