NON-FAT PUMPKIN DATE MUFFINS 
2 c. flour
1/2 c. sugar
3 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. ground cloves
1 c. canned pumpkin
1/2 c. skim milk
2 egg whites
1/2 c. chopped dates
1/2 c. raisins

Sift dry ingredients into large bowl. In a medium bowl stir pumpkin, milk and egg whites until well blended. Make a well in dry ingredients; add wet ingredients all at once, stirring briskly, until dry ingredients are dampened. Do not overstir. Stir dates and raisins in during last few seconds. Prepare muffin tin with cooking spray, fill cups 2/3 full. Bake 20-25 minutes in preheated 350 degree oven.

Options: 1 cup of any fruit can be used such as applesauce or mashed banana with crushed pineapple. Adjust sugar to suit.
