CHOCOLATE BUTTERMILK CAKE 
1 c. butter (2 sticks butter)
2 1/4 c. sugar
2 eggs
1 tsp. vanilla
2 c. buttermilk
1/2 c. cocoa
3 c. flour, sifted
2 tsp. baking soda
1 tsp. salt

Cream butter; add sugar gradually and beat until fluffy. Add eggs one at a time, then add vanilla. Sift dry ingredients together and add alternately with buttermilk to creamed mixture. Pour batter into 3 (9 inch) layer pans which have been lightly greased and floured. bake in preheated oven at 350 degrees for 25 to 30 minutes. Remove from oven and cool in pan 5 to 8 minutes. Finish cooling on racks then frost with the following (or your favorite icing).

MILKY WAY® CAKE ICING:

2 1/2 c. sugar
1 c. evaporated milk
6 oz. chocolate chips
1 c. marshmallow cream
1/2 c. butter

Cook sugar and evaporated milk to the soft-ball stage. Remove from heat and add remaining ingredients. Stir until all ingredients are melted and well blended. Frost between layers as well as top and sides, frosting top last.

This cake was awesome! The only thing I did different was leave out the cocoa powder. The cake was fine without it. Very moist. My family loved it!

Found the same recipe in a local paper and tried it out on my kids first... Amazing!!! They could not believe how moist it was (me neither).. Made it for work a week later and it was a hit! I used cake flour (2 1/4 cups) the first time and it made a big difference in how it rose. Have not tried it with all purpose flour but will try next time.

Cake was easy to make. Overall taste was very good. Slightly drier than I hoped. Next time I'd add an extra egg. I used a dark chocolate coco powder. And replaced the icing with a buttercream chocolate icing using regular or traditional coco powder.

Cake was awesome!!! I used a chocolate buttermilk frosting and it was beyond good! I bake all the time and am definitely bookmarking this recipe. Am trying it as cupcakes next.... :)
