CHOCOLATE BUTTERMILK CAKE | |
1 c. butter (2 sticks butter) 2 1/4 c. sugar 2 eggs 1 tsp. vanilla 2 c. buttermilk 1/2 c. cocoa 3 c. flour, sifted 2 tsp. baking soda 1 tsp. salt Cream butter; add sugar gradually and beat until fluffy. Add eggs one at a time, then add vanilla. Sift dry ingredients together and add alternately with buttermilk to creamed mixture. Pour batter into 3 (9 inch) layer pans which have been lightly greased and floured. bake in preheated oven at 350 degrees for 25 to 30 minutes. Remove from oven and cool in pan 5 to 8 minutes. Finish cooling on racks then frost with the following (or your favorite icing). MILKY WAY® CAKE ICING: 2 1/2 c. sugar 1 c. evaporated milk 6 oz. chocolate chips 1 c. marshmallow cream 1/2 c. butter Cook sugar and evaporated milk to the soft-ball stage. Remove from heat and add remaining ingredients. Stir until all ingredients are melted and well blended. Frost between layers as well as top and sides, frosting top last. |
