FLUFFY EGGS AND BACON 
1/2 lb. bacon (about 12 slices)
1/2 c. chopped onion
1/2 c. Bisquick
1/2 c. shredded mild Cheddar cheese
3 eggs
1 1/4 c. milk
1/4 tsp. salt
1/4 tsp. pepper

Cut bacon in thirds. Cook and stir until bacon is almost crisp. Add onions and continue cooking until bacon is crisp. Drain. Spread bacon and onion into 1 1/2 quart casserole. Beat baking mix, eggs, salt and pepper until almost smooth. Slowly pour egg mixture over bacon. Sprinkle with cheese. Bake uncovered until knife inserted in center comes out clean. Can use 1 cup 1/4 inch cubes of ham. Bake at 375 degrees for 35 minutes.
