FLUFFY OVEN EGGS AND BACON 
1/2 lb. bacon, about 12 slices
1/2 lb. chopped onion
1/2 c. Bisquick
3 eggs
1 1/4 c. milk
1/4 tsp. salt
1/8 tsp. pepper
1/2 c. shredded cheddar or Swiss cheese

Cut bacon into thirds. Cook and stir bacon until crisp; add onion. Cook a little, drain and spread in bottom of casserole. Beat Bisquick, eggs and milk until almost smooth. Slowly pour over egg mixture. Bake, uncovered 35 to 40 minutes. One cup of cooked ham may be substituted.
