RED CABBAGE AND VERMOUTH | |
1 sm. head red cabbage 2 tbsp. oil 1/2 c. onion, diced 7 tbsp. sweet vermouth 1 tbsp. honey 3/4 tsp. salt 1 1/2 c. seedless grapes, halved 1 tsp. lemon juice 1 tsp. arrowroot Shred cabbage coarsely. Saute onion until limp. Add cabbage, 4 tablespoons vermouth, honey, salt. Mix. Cover and cook 8 minutes or until cabbage is barely tender. Add grapes and lemon juice. Cover and cook 1 minute. Blend arrowroot and remaining vermouth and add to cabbage. Cook until juice thickens slightly. Serves 4. |
