SAUTERNE (OR VERMOUTH) APPLE BUTTER | |
About 14 apples 2 c. apple juice Sugar Cinnamon Allspice Cloves 1/2 c. sauterne (or vermouth), optional Wash, core, peel and cut up apples. Combine with apple juice in lightly oiled crock pot. Cover and cook on high 3 hours. Then add: 1/2 tsp. cinnamon 1/4 tsp. cloves 1/4 tsp. allspice To each cup of apples. Cover and cook on high setting for 8 hours; stir every few hours. After the 5th hour, remove the cover to allow the juices to partially evaporate. After 7th hour, add sauterne or vermouth. Put into hot, sterilized pint jars and seal. Refrigerate if seal isn't firm. Process in boiling water hot bath, if you wish to store this on the shelf. |
