SOLE ALBERT (SOLE BASED WITH
VERMOUTH)
 
1/2 dry vermouth
4 tbsp. butter, melted
3 chopped shallots
1 1/2 c. soft bread crumbs, 2 slices
2 tbsp. melted butter
1 1/2 lbs. sole fillets
1/2 tsp. lemon juice
1 tbsp. parsley

In 13 x 9 baking dish combine vermouth, the 4 tablespoons of melted butter, shallots, and parsley. Spread evenly in dish. Combine bread crumbs and remaining melted butter. Sprinkle over fish. Place fish, crumb side up atop the butter mixture and bake for 15 minutes in a 425 degree oven.

Remove to serving plate. Strain juices. Stir in lemon juice, pour over each serving of fish. Makes 6 servings.
