RUBY'S CUCUMBER PICKLES 
7 1/2 lbs. average size cucumbers

Peel, seed and slice cucumbers. Soak cucumbers in 2 gallons water and 2 cups lime for 24 hours. Rinse, and soak for 6 hours in 2 gallons of water and 2/3 cup or 1 box alum. Rinse, and soak in ice water for 6 hours. Remove cucumbers from ice water.

MAKE SYRUP:

2 qts. white vinegar
6 lbs. or 12 c. sugar
3 tbsp. pickling spices
1 tbsp. celery seed
1 tbsp. salt

Bring to a boil and pour over cucumbers. Let this sit overnight.

Next morning, boil the cucumbers in the syrup for about 15-20 minutes. Pack in jars, pouring liquid over pickles. Seal.
