JOAN'S PICNIC SALAD 
3 lbs. rice
1 onion, finely chopped
14 c. (3 1/2 qts.) boiling water
6 pkgs. (10 oz.) quick frozen green peas (cooked)
6 c. (about 1 1/2 qts.) mayonnaise (Hellmann's is best)
3 c. chopped dill pickle
5 cans (6 1/2 oz.) crab meat (drained, chopped, chilled)
2 lbs. Swiss cheese in thin strips
5 tsp. salt
1 1/2 tsp. pepper

Cook rice in salted water, then add peas, mayonnaise, pickles, onion and pepper. Mix lightly. Chill. Just before serving add crab meat and cheese. Serve on crisp lettuce leaf. Garnish with tomato wedges if desired. Can be made without crab meat.
