BREAD PUDDING WITH RUM SAUCE | |
3 eggs, slightly beaten 3/4 c. white sugar 3 c. milk 1 lg. apple, unpeeled, diced into sm. bits 3 c. bread cubes 1 tsp. lemon juice 1/2 c. raisins 1 tsp. vanilla RUM SAUCE: 1 c. milk 1/2 c. white sugar 4 tbsp. butter 2 tbsp. flour 1/4 c. cold water 1/2 tsp. nutmeg 1/2 c. rum To make pudding; combine eggs, sugar and milk. Stir in apple, bread cubes, juice, raisins and vanilla. Pour into buttered casserole. Top with bits of butter and sprinkle with a little sugar and nutmeg. Bake in a 350 degree oven until brown on top and pudding is set. (It should take at least 40 minutes.) To make rum sauce; combine milk, sugar and butter. Bring to a boil. In another bowl, combine water and flour. Stir until smooth. Stir into hot milk mixture. Cook over medium heat until thick. Remove from heat and stir in nutmeg and rum. |
