BROCCOLI CHICKEN SALAD 
1 (10 oz.) pkg. or 2 1/2 c. frozen broccoli spears
1 med. red delicious apple, cored and sliced
1 tsp. lemon juice
2 c. cubed cooked chicken
1/3 c. mayonnaise
2 tbsp. plain yogurt
1 tsp. soy sauce
1 tsp. curry powder (optional)
1/3 c. chopped roasted peanuts
2 tbsp. golden raisins

Place broccoli in colander or sieve. Run under hot tap water about 2 minutes or until thawed. Slice into bite-sized pieces and drain thoroughly.

Stir apple with lemon juice. Combine broccoli, apple, chicken, mayonnaise yogurt, soy sauce, curry powder and peanuts. Add raisins; chill. Serves 4. Fresh broccoli can be used instead of frozen.
