CHICKEN WITH BROCCOLI &
PINEAPPLE SALAD
 
1 (20 oz.) can pineapple in own juice
3 c. bite-sized pieces skinned, cooked chicken
2 c. bite-sized pieces of cooked broccoli
1 c. diagonally sliced celery
1/4 tsp. pepper
1/2 tsp. ground ginger or to taste
Salt to taste

Day Ahead: Drain juice from pineapple, reserve 1/2 cup juice. In large bowl, lightly toss all ingredients and reserved juice. Cover and chill overnight to blend flavors. Makes 4 main dish servings. (Soy sauce to taste if desired.)
