CANDIED YAMS 
6 lg. sweet potatoes
3 tbsp. cinnamon
2 tsp. nutmeg
1 tsp. vanilla
1/2 tsp. salt
1 stick butter, sliced
1 c. sugar (or more or less to taste)
1 qt. water

Peel and slice the yams in thin rounds. Put them in 1 layer, in a large shallow baking pan. Sprinkle with the slices of butter and pour the water over slices. Bake, uncovered in preheated 350 degree oven for 45 to 60 minutes until the potatoes are done and the liquid is syrupy. Serves 6.
