SWEET POTATO CRUNCH 
3 c. mashed sweet potatoes
1 c. sugar
1/2 c. melted butter
2 eggs, beaten
1 tsp. vanilla

Combine potatoes, sugar, butter, egg, vanilla, and mix well. Turn in greased 2 quart shallow baking dish. Sprinkle with Brown Sugar Crunch Topping. Bake at 350 degrees for 25 minutes or until bubbly. Makes 8-10 servings.

BROWN SUGAR CRUNCH TOPPING:

1/2 c. packed brown sugar
1/4 c. flour
3 tbsp. melted butter
1/2 c. chopped nuts

Combine all ingredients, mixing well.
