APPLE BLOSSOM CAKE 
1 1/2 c. vegetable oil
2 c. sugar
2 eggs
3 c. flour
1/2 tsp. cinnamon
1 c. nuts (chopped)
1/2 tsp. nutmeg
1 tsp. salt
1 1/2 tsp. baking soda
1/2 tsp. vanilla
3 c. apples, chopped coarsely

Mix oil and sugar. Add eggs, beat until creamy. Sift dry ingredients together 3 times. Add to creamed mixture. Mixture will be stiff. Add vanilla, apples and nuts. Mix well. Pour into well greased and floured bundt pan or loaf pans.

Bake at 350°F for 1 1/2 hours.
