ORANGE BLOSSOMS (CITRUS CAKES) 
This recipe resembles a cake popular around the turn of the century, but instead of using peaches like the original, it is flavored with citrus!

1 box yellow cake mix

Use the kind calling for 2 eggs and 1 1/3 cup water. Mix cake mix by directions. Grease and flour mini-muffin pans; fill muffin cups about 2/3 full.

Bake in a preheated oven at 350°F for 20 minutes.

GLAZE:

1 box confectioners' sugar
3/4 cup orange juice
2 tbsp. lemon juice
2 tsp. grated orange rind (dry dehydrated) in spice section

Mix ingredients together. Dip each cake into glaze while hot; drain and cool on rack.

Recipe makes approximately 8 dozen little cakes - NOT to be confused with any kind of pastry available in the store!

Baked cakes may be frozen.
