TEMPURA BATTER 
1 egg
1 c. ice water
1 c. all purpose flour

Measure flour in a bowl and add COLD water. Stir slightly until flour is lumpy (do not overmix!). Add a cold egg and stir lightly - not too much! Batter must be cold at all times! Too much mixing, or if the batter becomes warm will make the batter doughy.

NOTE: The easiest tempura batter is bought at the store, but this way you can make your own.

Make sure to keep it COLD or it will fall off of the item you are frying. I always put it in a medium bowl and then fill up a large bowl with ice water and put the medium bowl in it. Works every time

This worked very well. My daughter requested this and helped with the process. Everyone liked the batter for the shrimp and eggplant we cooked. I did add a small amount of salt after taking the food out of the oil.
