BROCCOLI CASSEROLE 
1 (10 oz.) pkg. chopped broccoli, or fresh broccoli in season
1/2 can condensed cream of mushroom soup
1/2 c. mayonnaise
1 egg, well beaten
1/2 c. sharp cheddar cheese, grated
2 tbsp. chopped onion
2 tbsp. butter
1/4 c. crushed Ritz crackers

Cook broccoli 5 minutes in salted water. Drain well. Combine soup, mayonnaise, egg, cheese, and onion (salt and pepper if desired). Mix well, add to broccoli and spoon into greased casserole dish. Dot with butter and sprinkle with crushed crackers. Bake at 350 degrees for 30 minutes.
