SWEET POTATO FRITTERS | |
2 c. mashed, cooked sweet potatoes 2 tbsp. melted butter 2 eggs, separated 1 c. milk 1/2 c. flour 1 tsp. baking powder 1 tbsp. sugar 1/2 tsp. salt Fat for deep fat frying Mix together potatoes, butter, egg yolks, and milk. Mix and sift flour, baking powder, sugar and salt; stir into potato mixture. Fold in stiffly beaten egg whites. Drop by spoonfuls into hot deep fat (365 degrees F) and fry for 2 to 4 minutes, or until golden brown. Drain on unglazed paper. Serve hot. Makes 18 to 24 fritters and serves 6. |
