ROASTED CORNISH HENS 
1/2 c. apricot brandy
1/2 c. soy sauce
1/4 c. lemon juice
2 tsp. freshly ground pepper
1 tsp. grated ginger root
4 cornish hens, 1 lb. each

In medium bowl combine marinade ingredients. Place hens in large baking pan. Pour marinade over hens. Let stand at room temperature for 1 hour. Preheat oven to 375 degrees. Bake hens basting occasionally 50-60 minutes or until golden brown and juices run clear when they are pierced with a fork.
