CLAM CHOWDER (MICROWAVE) 
2 slices bacon, diced
1 med. onion, diced
2 med. potatoes, peeled, diced
2 cans minced or chopped clams, drained (save liquid, add water to make 2 c.)
1/4 c. butter, melted
1/4 c. unsifted flour
3 c. milk
3/4 tsp. salt
1/8 tsp. pepper
2 stalks celery, diced
2 carrots, peeled and diced

Use a 3-quart microwave safe bowl. Cook bacon on high for 3 minutes. Add onion, potatoes, celery, and carrots. Cover and cook on high for 5 minutes. (I use plastic wrap over bowl.) Add clam juice and water. Cover and cook on high 8 to 10 minutes until vegetables are tender.

Melt butter in 2-cup measuring cup, stir in flour. Add to soup. Add clams and remaining ingredients (milk, salt, pepper). Cover and cook on high 4 to 5 minutes until hot. 4 to 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
