BANANA UPSIDE DOWN CAKE 
1 c. butter
1/2 c. brown sugar
2 firm ripe bananas cut diagonally into 1/4 inch thick slices
2 c. flour
1-1/2 c. sugar
2 eggs
1-1/2 tsp. vanilla
1 tbsp. baking powder
1/2 tsp. salt
1 c. milk

Preheat oven to 350°F. Melt 1/2 c. butter in saucepan. Remove from heat. Add brown sugar and stir until smooth. Pour into 9 inch diameter cake pan with 2-3/4 inch sides. Arrange banana slices atop sugar mixture, covering bottom of pan completely. Beat 1-1/2 c. sugar and remaining 1/2 c. butter in bowl to blend. Add eggs and vanilla and beat. Sift 2 c. flour, 1 Tbsp. baking powder and salt into bowl. Add dry ingredients to butter mixture alternately with milk, beginning and ending with dry ingredients. Beat 2 minutes and spoon batter over bananas.

Bake one hour. Invert cake onto platter. Serve warm.
