TOMATO WOODCOCK | |
1 lb. American cheese, sliced or cubed 1 can evaporated milk 1 can tomatoes (lg.) 1 egg, beaten 4 tbsp. flour for thickening Salt & pepper to taste Melt cubed cheese in top of double boiler with 1 can of evaporated milk. When melted, add 1 beaten egg to mixture. In separate dish heat tomatoes. Add salt, pepper, flour and water thickening to tomatoes. (Always add white thickening to tomatoes so cheese doesn't curdle.) When this is thickening pour it over cheese mixture. Stir. Serve hot on crackers or toast or serve cold as dip for potato chips, etc. |
