HOT FUDGE PUDDING CAKE 
This pudding cake is so sweet and gooey you'll never know it's nearly fatless - and your company won't either.

CAKE:

2/3 c. flour
1/3 c. oat bran
2 tsp. baking powder
2/3 c. sugar
1/2 c. cocoa
1/2 c. skim milk
1 tbsp. oil
1 tsp. vanilla
1/4 c. walnuts

TOPPING:

1/3 c. cocoa
1 c. brown sugar
1 3/4 c. hot coffee or 2 tsp. instant coffee dissolved in 1 3/4 c. boiling water

Preheat oven to 350 degrees. Stir flour, oat bran, baking powder, sugar and cocoa together in a 9" baking dish or 1 1/2 quart souffle dish. Add milk, oil and vanilla and stir to blend. Stir in nuts.

TOPPING: Combine cocoa and brown sugar so the cocoa is evenly dispersed. Sprinkle over batter. Pour hot coffee over all. Bake 45 minutes. During baking, the cake will rise, leaving a thick pool of hot fudge sauce beneath. Dip out pieces of cake with a spoon and lavish it with sauce.
