ZESTY MEATBALLS 
1 1/2 lbs. lean ground beef
2 tbsp. butter
1/4 c. chopped onion
1 clove garlic, minced
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. fine cracker crumbs
1 egg
1/4 c. milk
1 c. sour cream
1/4 c. chopped parsley

Break ground beef up and place into mixing bowl. In frying pan, heat butter and add onion and garlic. Saute 2 minutes or until onions are limp. Add to the ground beef. Mix in the salt, pepper, cracker crumbs, egg, and milk. Shape into walnut sized balls. In a frying pan, brown meatballs on all sides in oil, shaking pan to keep them turning. Meatballs will be cooked in about 5 minutes over medium heat. Remove meatballs. Keep warm. Drain excess fat from pan. Add a small amount of water to the pan. Bring to a boil; scrape up brownings from bottom of pan. Add sour cream; stir. Add meatballs and heat to serving temperature. Sprinkle with chopped parsley.
