BLACKBERRY COBBLER 
2 tbsp. cornstarch
1 tbsp. fresh lemon juice
4 c. blackberries, rinsed and well drained
1 tsp. baking powder
1/2 tsp. salt
1 1/2 c. sugar (divided)
1 c. all-purpose flour
3/4 stick butter, cut in bits

In large bowl, mix cornstarch, 1/4 cup cold water until dissolved; add 1 cup of the sugar, the lemon juice, and the berries. Combine mixture gently, but thoroughly. Transfer blackberry mixture to an 8-inch iron skillet or 8-inch square baking dish. In bowl, combine flour, remaining 1/2 cup sugar, baking powder, salt and blend in the butter until mixture resembles coarse meal. Add 1/4 cup boiling water and stir until it forms dough. Bring blackberry mixture to a boil on top of stove, stirring continuously. Drop spoonfuls of dough carefully onto boiling mixture and bake on a foil lined baking sheet in a preheated oven (400 degrees) for 20 to 25 minutes or until brown. Serve warm. (May be served with ice cream).
