MUFFIN TOP SUGAR COOKIE 
Best for dipping in coffee.

1 cup sugar
1 cup (2 sticks) butter, softened
1 tsp. almond extract
1 egg
2 1/3 cups all-purpose flour
1/2 tsp. baking powder
confectioners' sugar, for dusting (optional)

Preheat oven to 375°F.

Beat butter and sugar together on low speed of mixer until light and fluffy. Stir in almond extract and the egg. Then, mix. Stir in flour and baking powder.

Shape the dough into little balls. Then put them 1-inch apart on an ungreased pan.

Bake at 375°F for 8 to 10 minutes, or until edges are golden brown and they have set.

The cookies should be a little round. Cool on a wire rack. Later, sprinkle confectioners' sugar on it if you want.
