GOLDEN FRIED FISH 
1 c. all-purpose flour
1/2 tsp. salt
1 tbsp. vegetable oil
2/3 c. cold water
1 egg white
1 - 1 1/4 lbs. fish fillets, cut into serving size portions
Vegetable oil

Combine flour, salt, oil and water; blend well. Beat egg white (at room temperature) until soft peaks form; fold into flour mixture.

Dip both sides of fish into batter. Fry fish until golden brown on both sides in 1/2" of oil heated to 370 degrees. Drain on paper towels. Yield: about 4 servings.

NOTE: Drop any remaining batter by spoonfuls into hot oil; fry until golden brown. Serve with Golden Fried Fish.
