FRIED FISH 
4 lbs. whiting fish
1 box Jiffy cornbread mix
1/2 c. oil
Salt and pepper to taste
1 brown lunch bag

1. Wash and clean fish. Sprinkle salt and pepper on each piece of fish. Put one box Jiffy corn bread mix in brown lunch bag.

2. Heat oil on top of the stove. While oil is heating place fish in the cornbread mix and shake. When the fish is coated place fish in hot cooking oil. Brown on the skin side first then turn the fish over and brown on the other side.

3. Take fish out of pan and enjoy.

Be careful using Jiffy cornbread mix as a batter for frying food. There is a lot of sugar in Jiffy cornbread mix. Sugar tends to burn when heated to frying temperatures.

I used catfish pieces and this recipe worked great. The coating was crunchy and tasty. I didn't have any problems with them burning. My husband love them.
