FRIED FISH 
3 c. flour
1 tsp. lemon pepper
1 tsp. salt
1 tsp. red pepper
2 tsp. baking powder

Mix the above listed ingredients in large bowl or paper bag. Set aside.

3 eggs
1 c. evaporated milk
3 lb. fish filets
Salt & pepper to taste
Lemon pepper to taste
Favorite seasoning (optional)

Beat eggs until fluffy; add milk and blend well. Season fish filets with salt, pepper, lemon pepper, or any other seasoning desired. Soak fish in egg mixture making sure that all parts of the filets are covered.

Drop fish in flour mixture using bowl or paper bag. If using bag, shake to coat fish. Make sure that fish is well coated. If it appears that there is not enough coating, repeat the egg milk step and the flour step. Fry in deep fat until light golden brown or until fish is cooked. Do not overcook or coating may be tough.
