BROCCOLI CHICKEN CASSEROLE 
2 (10 oz.) pkgs. chopped frozen broccoli, cooked & drained
2 tbsp. butter
3 tbsp. flour
1/2 tsp. salt
1/4 tsp. pepper
1 c. milk
1 c. cream of celery soup
1/2 c. Parmesan cheese (or Cheddar sauce)
2 c. cooked chicken, cut in cubes
2 c. soft bread, torn into pieces
1 to 2 tbsp. butter, melted

Place the broccoli in the bottom of a 1 1/2 quart buttered casserole. Melt the butter in a saucepan and stir in the flour. Let bubble one minute, stirring constantly until mixture thickens; add cheese and chicken. Pour chicken mixture over broccoli. Top with bread crumbs tossed with butter. Bake at 350 degrees for 20 minutes or until casserole is heated completely. If bread crumbs need additional browning, place under the broiler for a minute or two. Serves 4 to 6.

NOTE: This casserole can be prepared at least one day ahead. Do not add bread crumbs until ready to bake. If refrigerated, extend baking time.
