SAUSAGE QUICHE | |
1 unbaked 9 inch pie shell 1 egg yolk 1 tsp. water 2/3 lb. Polish or German sausage, sliced or Italian bulk sausage 1/2 c. chopped onion 2 tbsp. flour 4 eggs 2/3 c. half & half 2 c. shredded Monterey Jack, Cheddar, or Swiss cheese Chopped fresh parsley and green pepper rings for garnish Pierce pie shell all over with fork. Beat egg yolk with water and brush shell with mixture. Bake at 400 degrees for 15 minutes or until partially browned. Put sausage and onion into skillet. Cook over medium to high heat until meat is browned and onion is limp. Stir in flour. Beat eggs with half & half. Set aside. Sprinkle half the cheese into bottom of pie shell. Top with sausage mixture, then remaining cheese. Pour in egg mixture. Sprinkle with parsley. Bake at 375 degrees for 25-30 minutes or until set. Garnish with green pepper rings. |
