ZUCCHINI RING 
3 c. cooked zucchini, drained & mashed
1 tsp. salt
1 tsp. chopped fresh marjoram, or 1/2 tsp. dried
2 tbsp. finely grated onion
3 eggs, well beaten
1/2 c. buttered bread crumbs

Put zucchini, salt, marjoram, onion and eggs together in a bowl and mix thoroughly. Sprinkle the bread crumbs evenly on the inside of the buttered mold. Spoon the zucchini mixture. Set the mold in a shallow pan of hot water that comes up the sides about 2". Bake at 350 degrees for 35 to 45 minutes or until firm. Turn the zucchini out of the mold onto a platter and fill if desired.
