FRESH APPLE CAKE 
1/2 c. sugar
2 c. diced, peeled apple (3 small)
1 c. flour (can use whole wheat)
3 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1 tsp. vanilla
1 egg, beaten
1/4 c. oil
1/2 c. chopped nuts

Sprinkle sugar over diced apples. Sift dry ingredients over apples. Mix and add egg, oil and vanilla. To this mixture add nuts. Bake at 375 degrees for 20 to 30 minutes. Makes a small cake (brownie pan size).
