APPLE NUT CAKE RING 
2 eggs
1 c. oil
1 1/2 c. sugar
1 tsp. vanilla
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
2 c. flour (I use 1 c. white + 1 c. whole wheat)
1/2 c. chopped walnuts
3 med. apples, diced (unpeeled)

Stir by hand. Beat eggs, oil and sugar until well blended. Add vanilla and dry ingredients; mix well. Fold in nuts and apples. Pour into greased and floured bundt pan. Bake at 350 degrees for 40 to 45 minutes. Cool and frost with cream cheese frosting.

A delicious cake which even children love. Best (of course) with New York state apples.
