CARROT CAKE RING 
2 c. flour
1 1/4 c. oil
1 c. packed brown sugar
3/4 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
1 tsp. vanilla
1/4 tsp. ground cloves
1/2 of 6 oz. can frozen orange juice concentrate (thawed)
4 eggs
2 c. shredded carrots
1 c. chopped walnuts
1/2 c. raisins

Preheat oven to 350 degrees. Grease and flour 10 inch bundt pan.

Into large bowl, mix first 11 ingredients at low speed with mixer. Beat at high speed for 4 minutes. With spatula, fold in carrots, walnuts and raisins.

Pour into prepared bundt pan. Bake 50 minutes until toothpick inserted into center comes out clean. Cool 10 minutes - remove from pan. Sprinkle cake with confectioners' sugar.

It took about an 1 1/4 hours for the cake to bake. I guess it depends on where you live.
